Olive Grove


The area of Domaine de Bigot has an olive grove of 500 olive trees of local varieties of Alpilles such as Picholine and Aglandau. This ensures the production of its own olive oil.


Aglandau brings forth a fruity raw artichoke and the Picholine is peppered with starting-from-the-mouth aromas of dry fruit. The mixture of both gives a very fruity and vegetal oil.


An exceptional moment of sharing, harvesting these olives makes it possible to obtain 700 litres of extra virgin olive oil per year. The olives are brought to the Moulin de Calanquet where they are worked on while they’re still green, they are pressed within 24 hours to avoid the fermentation. The production of the oil is done only by mechanical processes, after the first cold pressing. The bottled oil is extra virgin, with superior quality, but especially and comes directly only from the olives of Domaine de Bigot.


The Greeks and Romans started the cultivation of olive tree on the northern slope of the Alpilles.


The olive of Provence, whether green or black, is the local pride of Bouche du Rhône which became the first producer of olive oil of France.


This "Green Gold" is the emblematic ingredient of Mediterranean cuisine. It offers a "healthy" meal but it is also an "enjoyable" meal. This benefit of nature brings flavour and fragrance to all our recipes.
